For our sparkling wine we use the classic ‘champagne’ varieties of Chardonnay, Pinot Noir and Pinot Meunier. The base wines were bottled on 12th May 2014 with yeast added to enable the second fermentation in bottle which creates the bubbles. The bottles will now sit stacked in their cages in our Bottle Store for 2 – 3 years whilst the aromas and flavours develop until they are ready for riddling and disgorging. This is the traditional method for making ‘champagne’. We hope our first sparkling wines will be ready in 2017.
