  • Baccchus Frizzante 2018

As England’s first Frizzante, this is a delightfully new and light-hearted way to enjoy our ever-popular Bacchus wine.   Produced via tank fermentation, this lightly sparkling style fills the mouth with a gentle creamy effervescence that beautifully compliments the elegance and crisp freshness of the wine.  The addition of only a small amount of sugar for the second fermentation in tank delivers the ‘lighter fizz’ and at just 2 bar pressure allows us to bottle under screw cap.  The ‘tank method’, without the prolonged lees contact ageing of our traditional bottle fermented sparkling wines, also lends itself to creating this lighter, fresher fruit focussed style of wine.
The beautiful image of a murmuration of starlings over the iconic West Pier in Brighton was drawn for us by tattoo artist, Jo Chastney.

Serve: On its own, ideal as an aperitif with nuts, olives or cheese; or try a Frizzante Cocktail – a dash of Elderflower cordial, topped with Frizzante…delicious

  • Estate Selection 2018

The highest quality batches from across the vineyard are selected to become our Estate wine.  Led by Pinot Blanc & Pinot Gris this wine is elegantly textured and well-structured on the palate, expertly balancing an initial smooth mouthfeel with a crisp cleansing finish.  Layers of aromas range from quince, acacia & lime to hazelnut with a distinctive ‘salty’ minerality on the nose and palate.    The balance of the blend is made up from small batches of Ortega, Bacchus and Chardonnay – each contributing complexity and interest.
This is a very versatile wine for enjoying now or with the potential to develop over the next 2 to 3 years.

Food Match: Grilled fish, smoked salmon, sushi, cured meats.

  • Sandstone Ridge 2018

A chardonnay-led blend offering a perfectly-balanced fuller wine than is typical in England, making it highly flexible as a solo or food matching wine.  Hand-selected grapes and contact with young second-fill French oak barrels has enhanced the overall mouthfeel & complexity of this wine and supports the exotic array of aromas from honeysuckle, jasmine & peach to fresh coconut & vanilla with just a touch of white pepper spice.

Food Match: Roast Port/Chicken/Turkey, Spaghetti Carbonara, Risotto, Clam Chowder, Chicken Liver pate, Potted shrimp, Lobster with butter

  • White Pinot Noir 2018

A light, delicate and subtle wine pressed very gently from whole bunches of Pinot Noir, it displays evocative aromas of rose petal, maraschino cherry & redcurrant on the nose.   A proportion of the wine underwent malo-lactic fermentation providing an added creaminess on the palate which reminds us of English raspberries and cream, backed by a pleasing smooth freshness.

Food Match: Dressed crab, fried mushrooms, mackerel, fish pate, trout, cooked oysters, calamari or cheeses

  • Cellar Selection 2017

This wine imparts attractive aromas of citrus peel, flower blossom and white stone fruit (peaches, lychees) courtesy of the Ortega, a german grape variety, recognised for it’s early ripening and the high sugar levels reached in the grapes even in our cool climate.   In the Winery, our Ortega is partially barrel-fermented and lees stirred, leading to just a hint of sweet oak coming through on the palate. The whole-bunch pressed Chardonnay lends the blend excellent structure, length and finesse and will give it great ageing ability.  This is one for both drinking now and cellaring.

Food recommendation – monkfish, grilled sardines, clam chowder.
