Tucked away in the lee of the South Downs, just 3 miles from Albourne Estate is Springs, a traditional smokery that has been runing since 1964 . Unlike mass produced smoked salmon, they hand fillet every side, cure it with just salt for several days before it is smoked in brick kilns for over 24hrs using only whole oak logs.
The 4 day process results in smoked salmon with a beautiful texture and a wonderful smoky aroma and taste. And is of course perfect to pair with our sparkling wines.
